Directions: Use a thick heavy-duty pot if possible, fry the onions in oil till browned then add together meat, salt, pepper, mild chili powder, cover (keep in moisture) plus if it looks like it's getting dry or hard to stir add water as needed.
Once meat is browned, turned down on low and add the “oatmeal”, stir and every 10–15 minutes keep stirring and cover meat, it takes about 1–2 hrs before the taco meat starts to smell and taste great, this takes patience but is the magic, if you cook to high it will burn the bottom, it’s okay to roast the meat on slow (this takes a long time) it starts to add flavoring from the oatmeal and the oatmeal holds the meat together, like I said about 2 hrs but more like 3 hrs.
Lumpia wrapper when fresh is tasty, I get this at the market the same day, also can be fried in a flat non stick skillet into the shape of a taco, wife did this once, she held one side up and once the half was fried she turned it around. But in our region we can by soft shells and everyone prefers the soft shells make no mistake about it.
Spanish Fried rice Got this recipe while stationed in San Diego in a bar

Cooking Directions: Large wok, add oil generous amount, add ¾ of the diced onions, red bell pepper diced to clean milled rice and fry (dry), it takes a little while you're roughing up the grains, and it gives the fluffy texture to the rice, once the rice is well fried sort of browned 15–20 minutes on high, then put it in your rice cooker, add the package of tomato paste and stir well then turn on the rice cooker, stir it later, it'll be delicious.
Re-fried Beans (Black beans) Puregold, Shopee, Lazada or some markets carry the black beans (dry) Sometimes hard to find, you might have to use other beans, and it won’t taste as great but still good.
Bean preparation Soak overnight if possible, keep checking the water level, they can soak up quickly
Large ceramic pot (locally sold)

Beef bones or beef stock, Knorr beef cube (if possible but not needed) little bit of oil
Potato masher for mashing those beans, It’s work… But worth it
Cooking directions' step 1: Soak beans overnight, when ready to cook use the local ceramic brown pots, can use thick steel pot and electric also, charcoal saves money, add diced onions, salt and pepper if you have beef bones or saved juice left over from Bulalo add this to the beans, add only enough water and juice to cover beans, try not to burn beans, some will get stuck to the bottom, they need to be stirred frequently to cook consistent. Cooking time is around 3 -4 hrs plus depends, “don’t drain all the bean juice” because you will be adding some back to the fried beans, also most of the juice is the beans…LOL. Continued-
Cooking directions' step 2: Heavy-duty steel pot heat medium, generous amount of oil and add 3 diced onions, salt, brown the onions (important for flavor), add beans and start mashing (takes a while sorry), add some of the thick bean juice and keep on mashing, when it starts to thicken watch out the beans start to pop out and can get on your skin, it’s hot so be careful.
Taco sauce Not too hot so the kids and others can enjoy, I like hot but? This is still very good
Tomato sauce Del Monte 1 pkg, Large package
Yellow onions diced Don’t use the purple ones ugh, it won't taste right one large diced
Water Add some water to the mix to keep it thick, but it needs water
Salt 1 teaspon
MSG 1 teaspon
Black pepper (allot, way more than normal 2-3 teaspoons) Quality fine pepper needed the sauce flavor is dependent on quality fine black pepper also white pepper and allot
Mixing directions: Try to mix this the night before, one large package of tomato sauce, yellow or white onions diced, salt and pepper (a lot of pepper). If you use the local purple colored onions it ends up tasting horrible, I did this once and wasted a whole package of tomato sauce. Stick in the fridge and stir occasionally. If you need hotter, add in your favorite damaging peppers as you see fit.
Chili
If no crock pot ----- local ceramic pots that cook with charcoal
Hamburger 2 kilos not too lean, mix 70/30
Tomato sauce 1 large package
Onions 3 large yellow diced
Celery, two stalks chopped
Garlic 1/2 of the tally or bunch, powder might taste better
Chili powder mild (shilling brand) Shilling brand is sold here 1 pkg
Cumin 2 teaspoons Sold here also
bay leaves - 2
Oregano, a dash only
Black beans preferred Its chili so allot beans, you can find beans at your local markets
Salt 2 teaspoons
MSG 1 teaspoon
Pepper 2 teaspoons
Bell pepper 2 red diced
Cooking step 1: Bean preparation boil the beans until near tender, the bean juice is needed for flavoring so don’t drain... add this to the crock pot.
Cooking step 2: Fry onions, bell peppers till browned then add hamburger brown and all seasonings, next step is adding tomato sauce into the crock pot.
timeline: Cook on high until you see it bubbling, then turn down and cook from 3 to 5 hrs.
- Quality ground meat, not to lean if lean add the some fatty ground beef about 1/4 - 1/2
- Chili powder (Mild) shilling brand Found in most grocery stores 1 pkg
- Cumin 1- 2 teaspoons
- Garlic Be generous and make sure it's either roasted and diced or add powdered garlic
